The American Bison, (Bison bison) is an Icon of Historic Wildlife in North America, and is just as often called the Buffalo. There are two surviving species today, the Wood Bison and the Plains Bison. The Plains Bison is smaller, and the Wood Bison is the largest land animal in the Americas, and is native to the North American Plains and Prairies. In the wild, the bulls may weigh 2,200 or more pounds. Before the European settlers came there were 60 million American Bison.  In the 1800s they were slaughtered almost to extinction by Sport Hunters and tourists for the hides, and often just for the fun of killing them. History saw nearly all of the meat rot under the Prairie Sun. By 1900 only about 15 thousand Bison survived. 

It is said that in 2016 there are nearly 600,000 Bison raised by Ranchers for meat and hides. It is claimed the meat tastes much like beef.  Perhaps, but Buffalo meat has a much heavier and tougher grain, and much less fat, making it a very "Dry" meat. It is said to be a healthier meat than beef, as it contains more protein and less cholesterol.

To make the meat more palatable and moist, butcher shops will mix pork with Buffalo meat to make the popular "Buffalo Burger Patties", and they are good. Amongst Hunters, Elk meat is preferred to mix into the Buffalo meat to make the popular " Elk Kind of Buffalo Burgers", and they are good. At many Historic Events in North America you will probably find yourself eating " Buffalo Burgers", to give you that .... "Taste of History".  Yep, a lot of Settlers ate Buffalo steak, and for that you needed good teeth, a sharp knife, but, unfortunately, Ketsup was yet to be invented.
